DIY Fried Ice Cream

So, lots of changes over here. I silently migrated my blog from blogger to WordPress earlier this year and it has been a real process. I upgraded my professional website at the same time (go check it out http://www.maryjoneher.com) and when it was all said and done I was sort of pooped and overwhelmed with technology…summer hit…and then BAM fall was here and a new school year was upon us. We’ve had lots of changes in our house, two kids in two different schools, I have a new horn, and life just keepings coming at us…fast. All that said I really miss writing and one of the reasons I wanted to make the change to WordPress was so that I might be inspired to write more. I have lots of tutorials drafted from the various projects I’ve been up to and as always I have plenty of thoughts on life as a musician and parent.

One thing I’ve wanted to try is a weekly “tip” or “life hack” post. Think, Martha Stewart’s “Good Thing”. I have plenty of things that we’ve just sort of come up with and incorporated into our lives that make things easier and/or bring us joy. And I’ve gathered lots of various tips from friends and family too, so of course I am going to share that with you all! And if you have any tips, life hacks, joyful things to share please let me know. Remember, it takes a village!

So for my inaugural “WONDERfilled Wednesday” post I am sharing my DIY Fried Ice Cream hack. Now you have to understand a few things here. I grew up in Alaska and we had only a handful of Mexican restaurants when I was young. One was Garcia’s and another La Mex. We love Mexican food…so it was a go to for most of our celebrations…and no celebration was complete without dessert…and my dessert of choice (forever and always) is fried ice cream (followed closely buy a good creme brûlée). Real fried ice cream is soooo good, and over the years I’ve had my share of various kinds. Some had an actual batter fried shell and came with hot fudge or strawberries and whipped cream, occasionally they’d be drizzled with honey. In recent years we’ve seen ice cream that was obviously just rolled in corn flakes and then often served frozen, solid as a brick and inevitably tried to shoot off the table when a spoon was eagerly pushed into it!

Our favorite local Mexican place here in Chicago does not even serve dessert and it’s been a real bummer (don’t worry the savory food they serve more than makes up for it!) but I found that I really pine for my childhood treat and so last year sometime I had the idea to scoop myself some vanilla ice cream and then top it with my kids’ Cinnamon Toast Crunch cereal. BAM! Instant, yet accessible, fried ice cream. Aside from the temperature (it’s not hot/warm on the outside) it’s really close to the flavor and texture of that traditional fried ice cream of my youth. This last week was the end of three months of hard work and so I thought I deserved a little treat. I whipped up my WONDERfried Ice Cream for everyone and they were all blown away! I love that you can make it on the smaller size or size it up easily for bigger treats. The kids think they are really getting something amazing (I mean it is delicious) but I love that I can really control the portions. They each get a small scoop of vanilla with about 1/4 cup of cereal on top.

This week we chose to level it up even more and used Apple Pie Toast Crunch (we’re in full fall mode here) on top of a pile of vanilla ice cream and then drizzled honey over the whole shebang. OMG the honey takes it over the top! Side note, this is the first time I’ve bought Target’s “Favorite Day” brand ice cream and it’s really good! Creamy and sweet. Full 1 gallon container. Scoops easily. Highly recommend checking it out!
